Ingredients
1 1/4cupbananas, mashedabout 2 large-very ripe
1cupbrown sugar
2largeeggs
1teaspoonvanilla
1teaspoonbaking soda
1cupwhole wheat flour
1 cup all-purpose flour
1cupchopped walnutsoptional, but a good idea
Instructions
Pre-heat oven to 350 degrees. Grease 1 loaf pan (or a couple mini loaf pans)
In a large bowl, mash together bananas and brown sugar.
Add in eggs and vanilla. Stir to combine.
Fold in baking soda, whole wheat flour, and all-purpose flour. Stir until mixture is combined but not smooth.
Fold in walnuts.
Pour batter into greased loaf pan. Bake for 45-1 hour or until toothpick comes out mostly clean. Remove from oven and place on cooling rack. Allow to cool in the pan for about 15 minutes and then remove from the pan and allow to finish cooling.
Notes
Many people make the mistake of using bananas that are not ripe enough. We want to be sure there is maximum sweetness (the most starch converted to sugar) so allow your bananas to get very black (just not moldy or oozy).
