Summer is the time of year when I really just don’t want to be in the house a ton if I don’t have to. The sun shines a lot where I live and the kiddos sleep better when they’ve been running around outside all day. And I really don’t like to stand over the stove if I don’t have to. Enter: this no cook strawberry syrup. All you need is some frozen strawberries, sugar, and a couple hours to get the freshest tasting strawberry syrup. It’s a pretty quick and easy way to add a little something special to your summer.

Why are we using frozen strawberries instead of fresh?

You can totally use fresh strawberries-it just takes longer to get your syrup. Frozen strawberries as they thaw release water and that liquid combined with your sugar is your sweet strawberry syrup

How Should I Use My Strawberry Syrup?

  • Mix with your favorite Iced Tea
  • Coffee Drinks-iced or hot
  • Swirled into yogurt
  • Drizzled over ice cream
  • Splashed into your favorite adult beverage
  • Combined with some sparkling water and a lime wedge for an incredible mocktail
  • Folded into whipped cream for a strawberry cream frosting or ice cream topping
  • Two Words: strawberry lemonade. See my brown sugar lemonade recipe here and simply swap the strawberry syrup for the brown sugar syrup

What do I do with the leftover strawberries?

So we strain out the strawberry solids at the end to get just strawberry syrup. But don’t waste those beautiful sweet strawberries! Honestly, I just eat them straight (or rather my kids come and want to eat them straight) but they are really excellent with some Greek yogurt or ice cream. Or dump them into your pitcher of lemonade and make your own Freckled Lemonade a la Red Robin.
