This easy toasted pecan brown sugar syrup comes together with just 3 ingredients and about 10 minutes. It’s the perfect fall addition to your morning coffee or latte! Bonus treat-some delicious leftover pecans!

I’ve been like low key into making coffee syrups lately. They’re super simple to make your own and buying them is actually pretty expensive. I’m typically a hot coffee drinker but I’ve found the joy of Nescafe Gold (thanks tik tok…) and so I’ve been into making iced lattes this summer too. One thing about a cold drink is that it’s better to have a syrup rather than straight sugar (unless you’re into the crunchy bits at the bottom of your cup….looking at you Dunkin’).
I’ve made a few different syrups, but I think this pecan brown sugar one is my favorite yet and it’s perfect for all of your fall beverages.

How do you make pecan brown sugar syrup?
- Pour your pecans into a dry skillet. Turn on your stove to medium heat and stirring them constantly, toast the pecans for about 3 minutes. You know they’re done when you can smell them.
- Add in the brown sugar, stir them together
- Carefully add in the water-it will steam and splutter because your pan is hot. This is ok.
- Bring the mixture up to a simmer. It’s done when the sugar is dissolved. You can feel with your spoon when the sugar is dissolved-it’s no longer grainy.
- Strain the syrup into a clean jar-use a funnel if you have one-if you watch my video below you can see me spill hot syrup all over… Allow to cool and store in the fridge.
How long does brown sugar syrup last?
About 2 weeks in the fridge.
Does it harden in the fridge?
Nope! We don’t cook the syrup very long, just long enough to dissolve the sugar so it will stay liquid even if it’s cold which makes it a perfect sweetener for cold drinks.

What do I use it for?
- Coffee syrup-my favorite way to use it-because it’s in syrup form it makes a great sweetener for both hot or iced coffee
- Cold foam sweetener
- Moisten your cakes
- Add it to your favorite fall cocktail
- Mix it in with some club soda
What do I do with the leftover pecans?
- Eat them straight out of the pan (that’s what I did-I had plans for them, I really did but they were delicious and I was hungry)!
- Let them dry and put them in a container for a snack for later
- Put them in your oatmeal or overnight oats
- Sprinkle them onto your morning yogurt
- Add them into a batch of granola
